Sage Pork Chops

(with Karabin enhancements)
4 boneless pork loin chops (6 ounces each)
Coarse salt and ground pepper
1 tablespoon olive oil
1 tablespoon butter
1 medium shallot, minced
(used onion because that,s what I had!)
1 teaspoon chopped fresh sage or 1/4 teaspoon dried
or both
1/4 teaspoon dried thyme leaves
or fresh, or both
1/2 cup dry white wine
Season pork generously with salt and pepper. In a large skillet, heat oil and butter over medium; add pork. Cook until browned and opaque throughout, 3 to 4 minutes per side. …
Make sauce:
Add shallot to skillet; cook over medium, stirring until softened, 1 to 2 minutes. Add sage, thyme, and wine.

I decided on potatoes, (because that’s what I had), mashed with onions and garlic and and Parmesan cheese, all of which I had in the fridge.
I also added some Marscapone.
In addition I wanted a nice vege medley side.
I bought Asparagus, Carrots, Orange peppers, Sage, Thyme
It was a tough day for me watching the international crisis unfold. Packing for Fire Island.
