4 boneless pork loin chops (6 ounces each)

Coarse salt and ground pepper

1 tablespoon olive oil

1 tablespoon butter

1 medium shallot, mincedIMG_9795 (1)

(used onion because that,s what I had!)

1 teaspoon chopped fresh sage or 1/4 teaspoon dried

or both

1/4 teaspoon dried thyme leaves

or fresh, or both

Season pork generously with salt and pepper. In a large skillet, heat oil and butter over medium; add pork. Cook until browned and opaque throughout, 3 to 4 minutes per side. …IMG_9791 (1)

Add shallot to skillet; cook over medium, stirring until softened, 1 to 2 minutes. Add sage, thyme, and wine.IMG_9798 (1)


I decided on potatoes, (because that’s what I had), mashed with onions and garlic and and Parmesan cheese, all of which I had in the fridge. IMG_9759 (1)

I bought Asparagus, Carrots, Orange peppers, Sage, ThymeIMG_9807

It was a tough day for me watching the international crisis unfold. Packing for Fire Island.

We need to cry out for justice, equality, against gender discrimination, identity, race and humanity. Sorry to be so political on a cooking blog but I am compelled to a least tell you what I am feeling as I write this.

Watching the events today as I was cooking it was frightening.
