Hello Darkness My Old Friend

I’ve come to talk with you again.

 I am obsessed with the beautiful images that surround me everywhere on Fire Island. I can’t unsee them. They talk to me…they sing to me. They play music in my head. I am enraptured all the time; hearing the melodies that go with the images. This was dawn last week. My friend was sleeping in the bedroom (I was up at dawn as usual), and I just kept hearing Simon and Garfunkel singing this song.

I wanted to make a lovely brunch for him when he finally woke up.Tomatillo beauties

Green Gazpacho with Grilled Shrimp

Fresh bread gives Gazpacho body, making a substantial summer entre soup. Use bread from the bakery section for best results.


( leftover corn and tomatoes from previous nights dinner Happy Face!!!)

1 1/2 cups plain low-fat yogurt (not Greek style)

1/4 cup olive oil, divided

2 Tbsp. fresh lime juice

1/4 cup coarsely chopped green onions 

whole-wheat bread, crusts removed and torn into bite size pieces ( about 2  cups)

2 cups chopped seeded English cucumber

1/2 tsp. sugar

1/2 tsp. kosher salt

1/2 tsp. black pepper

4 large tomatillos, husks removed, rinsed and quartered ( about 1 lb.) medium Shrimp, peeled and deveined


Combine yogurt, 3 tablespoons oil, and lime juice in large bowl, stirring with a whisk. Stir in poblano, green onions, and brad; let stand 10 minutes, stirring occasionally. Place yogurt mixture in the blender with cucumber, sugar, salt, black pepper, and tomatillos, blend until smooth.

Heat 1 teaspoon oil in a large non stick pan, cook 3-5 minutes until done. Place 1 1/4 cups cucumber mixture in each of 4 bowls; top evenly with shrimp and remaining 2 teaspoons of oil.


3 Beefsteak Tomatoes

Handmade Mozzarella Cheese

Reduced Balsamic Vinegar

and topped with grilled shrimp

 So at the end of the day its about appreciating the gifts you have been given (the light, the darkness; health; your children and your friends….) We need to look at the sky, the stars  and the moon (lets not forget mars!!!) and say thank you everyday.

 I most grateful for my kids. They keep me honest…..they love me, and take care of me even though I am far from perfect.  What more can you ask for?
