Halloween comes early on Fire Island because almost all but 3 restaurants/bars are closed by the beginning of October. They have Halloween parties the 2 middle weeks of October. I decided to make some seasonal fall dishes for the occasion. One of the things you do at the end of the season is empty your refrigerator of all perishables. I had a bunch of tomatoes (that I didn’t want to throw away) so I decided to make a fresh tomato soup.
I found other ingredients that were also in the fridge… Yes I’m a food shopaholic!!!
I found some basil, onions and garlic, in the produce drawer and chopped those up and added them to my mise en place
I decided to make tomato soup, and a little César salad. I started by chopping some onions.
Then I blanched the tomatoes in boiling water to remove the skins.
I chopped up some Basil.Onions and Garlic
Then I used my stick blender to blend tomatoes, basil, (some dried oregano), onions, garlic, salt and pepper.
So what would go well with Fresh Tomato soup????
3 tablespoons unsalted butter, cubed and at room temperature, plus melted butter for brushing
2 tablespoons packed brown sugar
1 1/4 oz packet of active dry yeast
6 cups of all purpose flour
2 teaspoons of kosher salt, plus more for sprinkling
2/3 cup baking soda
mustard for dippingShape into pretzel shape
Bake at 350 for 20 minutes
Serve with soup and saladeveryone had a great time!!!!
