I keep telling people that my sister fired me from making Thanksgiving this year because I live in a 1 plus bedroom apartment now instead of my big house in Riverdale and there is just not enough room for everyone to sit at the table (only seats 8) . So she decided that she was having Thanksgiving at her house this year (wait a second?…. her table only seats 8 as well…HaHa), but there was certainly more room for people to sit rather than my little apartment., so I decided to make the grandma classics and some ACTUALLY healthy things to bring to her house. Those of you who have been around for a while have seen these recipes before.
Grandma’s Mashed Potatoes
It’s simple really. 6 or 8 potatoes peeled, cut up and boiled until tender mashed then whipped with hand blender. Add 2 sticks of salted butter while still hot so it melts , then add a quart of heavy cream and whip again!!! salt and pepper to taste. This year I cut up an onion into small pieces and fried in butter and topped the potatoes with it and added some paprika for color and spice.
Cuban Meat Stuffing
Before I knew for sure whether my son Andrew’s girlfriend, Phelan, was coming, I decided to make some healthy vegetarian, (which she is) stuff, so she would have some thing to eat!!
Turns out she didn’t come but others had some vegetables to eat. Haha
Boil Brussel sprouts for a few minutes,(maybe three minutes until they are tender but still have green color ( not gray) chill in cold or ice water, (to stop cooking) sauté sliced mushrooms and garlic to add to dish. add salt pepper and chopped red peppers olive oil and vinegar and Toss.
7-8 fresh corn cobs husked and boiled until just tender
remove kernels with a sharp knife
steam 1/2 pound of snow peas again until just tender
add some sautéed onions and red peppers diced, chopped tomatoesI sliced some tomatoes and arranged the corn salad in away that was attractive and made a mustard vinaigrette to serve it with: Mustard, oil, vinegar, salt, pepper.Then I made some broccoli
